Sunflower seeds are an excellent
source of vitamin E, the body's primary fat-soluble antioxidant. By protecting cellular and molecular components, vitamin E has significant anti-inflammatory effects, reduces the risk of colon cancer, and plays an important role in preventing cardiovascular disease. These seeds are rich in phytosterols which are believed to reduce blood levels of cholesterol, enhance the immune response and decrease risk of certain cancers. Sunflower seeds are also a good source of magnesium, essential for the health of the nervous system, and selenium, a trace element involved in cell repair and protection that may prevent development of certain cancers.
